A great cut of beef needs no introduction. But it needs a finish. MAH doesn't compete with the meat — it completes it. One brush. The steak becomes classified.
Ribeye or NY strip 200–250g
MAH Sauce 1–2 tbsp
Butter 1 tbsp
Rosemary 1 sprig
French fries
Sea salt + black pepper
FIELD SWAP — Any thick cut works.Thin cuts will overcook. You have been warned.
[01] Sear on screaming-hot cast iron. 3 minutes each side.Rest 5 minutes. Mandatory. Not a suggestion.
[02] Reduce heat. Baste with butter and rosemary.Add MAH in the final 30 seconds only.
[03] Slice against the grain. The cut reveals everything.
