OKONOMIYAKI

TARGET NO. 18 · OKONOMIYAKI

THE OSAKA OPERATION

Okonomiyaki means "cook what you like." That freedom is the whole point. MAH enters as a calculated disruption — cutting through the sweetness of the brown sauce, drawing a sharp red line across the white mayo, making the familiar suddenly unrecognizable.

PHASE SEQUENCE

[01]  Mix batter with cabbage and egg.Cook on medium heat. Pork on top.Flip once. No more.

[02]  Draw mayo in parallel lines across the surface. Then draw MAH across the mayo — perpendicular.Create the grid. This is the classified pattern.

[03]  Top with katsuobushi and aonori.Watch the bonito flakes move in the heat. That motion is the signal to serve.

TOP SECRET

Mix MAH with mayo at 1:2 ratio before drawing. The blend drizzles more precisely and the heat distributes evenly. Pattern matters.
