Chicken thigh  300g

Soy sauce  2 tbsp

Sake  1 tbsp

Ginger (grated)  1 tsp

Garlic (grated)  1 tsp

Potato starch

Frying oil

MAH Sauce  for dipping

Lemon wedge

Kewpie mayo (optional)

FIELD SWAP —Frozen karaage from any convenience store or supermarket works perfectly.Heat fully, then apply MAH.The upgrade happens in the last 30 seconds,not the first 20 minutes.

PHASE SEQUENCE

[01]  Marinate chicken in soy sauce, sake, ginger, garlic.Minimum 20 minutes. Longer is better.Patience is a weapon.

[02]  Coat in potato starch. Fry at 170°C for 4 minutes.Rest 2 minutes. Fry again at 190°C for 90 seconds.Double fry. Non-negotiable.

[03]  Serve immediately. MAH on the side for dipping.Squeeze lemon over the top. Begin the operation.

Mix MAH with Kewpie mayo at 1:2 ratio. The result is a dipping sauce that has no business being this good.
