Udon noodles × 1 pack
Kimchi ½ cup
MAH Sauce 1 tbsp
Dashi broth 1.5 cups
Soy sauce 1 tbsp
Mirin 1 tsp
Soft-boiled egg × 1
Green onion
Sesame oil dash
Nori (optional)
FIELD SWAP — Frozen udon and store-bought kimchiare the standard issue for this operation.No preparation required beyond heating.Add MAH directly to the broth.The broth does the rest.
[01] Stir-fry kimchi in sesame oiluntil edges caramelize.The kimchi must smell roasted, not raw.
[02] Add dashi, soy sauce, mirin. Bring to simmer.Add MAH Sauce. Stir once. Let it settle.
[03] Add udon. Cook 2 minutes. Transfer to bowl.Top with egg, green onion, and nori.
