Soy sauce  1 tbsp

Mirin  1 tbsp

Ground chicken  200g

Ginger (grated)  1 tsp

Egg yolk × 1 (for dipping)

MAH Sauce  1 tsp

FIELD SWAP — Pre-made yakitori and tsukunefrom supermarket or convenience storeare standard issue for this operation.Reheat on direct flame if possible.The char from reheating is not a compromise.It is part of the mission.Apply MAH tare in the final 60 seconds only.

PHASE SEQUENCE

[01]  Skewer chicken and green onion alternately.Grill over high heat, turning every 60 seconds.

[02]  Combine MAH + soy sauce + mirin as tare.Brush onto skewers in final 2 minutes.

[03]  For tsukune: mix yolk + MAH in small dish.Dip the tsukune fully before each bite.

The yolk and MAH dip is the classified intelligence of this entire operation. The ratio: 1 yolk to ½ tsp MAH. Too much MAH and the yolk loses its role. Balance is the mission.
